Did I redeem myself? I think I did!

You guys…okay, so I will admit to you guys that I am not the best baker in the world. As a matter of fact, here is a cake(made with a boxed cake mix) I baked for my daughter’s 4th birthday.

Looks tasty, right? To be fair, my daughter decorated it. Did the kids eat it? ….no. I also made some chocolate chip cookies that looked like muffins. Did they eat those? ….no. I tried one and it. was. AWFUL. The texture was weird, the cookie was dry, it was bad. Because of that, I’ve stayed away from baking. I can cook most of you under the table, but the moment I have to accurately measure and put it in the oven to create something is a no.

Until today, my friends. UNTIL TODAAAAAAY!

Earlier today, I began to think about pound cake. Pound cake is #2 on my Favorite Cakes List, behind yellow cake with chocolate frosting. I began to mentally check off the ingredients I knew were a part of the basic recipe.

Flour? Yes, I got it. Butter? Got a buttload of that thanks to my beau. Sugar? Of course I have it. Oh! I also have a couple of lemons…and sour cream…hm.

I then began to scour the internet for easy recipes. I found a ton of them, but they all had more than 5 ingredients. My philosophy regarding baking has been that if there are more than 3-4 ingredients, then I would more than likely fail. I became momentarily discouraged. I took a deep, cleansing breath and decided that TODAY IS THE DAY I BEGIN TO BAKE! *cues “Eye of the Tiger”* I found a recipe that I hoped would yield better results than my “Chocolate Chip Shortbread cookies with Strawberry Jam Topping”
-sounds delicious, right? Nope, failure. Ask Emanuel. Smh-
and went for it. I found out a couple things while making this cake:
1. I desperately need a hand/stand mixer. Have you ever hand mixed a cake from scratch? Took me 20 minutes…
2. I desperately need some mixing bowls, cuz’ a sister had to use her spaghetti pot to mix all of the ingredients together.
3. I don’t own a bundt pan. I also don’t own a loaf pan. So. Yeah.

I am a firm believer of using what you have to get what you want, and that’s what I did. I buttered and floured my  9×11 glass baking pan and got started. I found the recipe here:

I followed the directions To. A. TEE! and I was rewarded with this beauty.

It looked a little lonely, so I made a basic lemon glaze to go on top. That entailed mixing 2 cups of powder sugar with about 3-ish tablespoons of lemon juice. You may find that your glaze is a little too thick. If so, mix a teeny bit more liquid into your powder sugar until you get your desired thickness. I also added the zest from the lemon to it. I waited until it was slightly cooled and then poured the glaze on top. (I should have waited until it was completely cooled to glaze it, because it ran all over the place.)

The end result? Hot dang, it was DELICIOUS! The cake was moist with a light lemon flavor. The glaze gave it a more pronounced lemon flavor, and I’m glad I added it.

It’s not much to look at, but it is the best cake I’ve ever made. I can say that with complete honesty. Lol
